Each month, we feature simple, flavorful recipes that highlight what’s in season and what you might already have from your pantry or food box.

Whether you're cooking with meat, going meatless, or craving something sweet, there's something here for everyone.


🍗 Meat-Based Recipes

Hearty meals featuring lean proteins paired with seasonal produce and pantry staples.

  • Southwestern Tuna Salad:
    • This Southwestern Tuna Salad uses canned tuna, canned beans, and canned corn for a zesty, flavorful, and nutritious tuna salad! This recipe makes about 6 servings - great for meal prepping at the beginning of each week and eating lunches or dinners throughout the week.

  • Chicken Stir Fry:
    • This chicken stir fry combines pantry staples like canned chicken, canned vegetables, chicken broth, and rice together for a quick and nutritious recipe! This recipe is very versatile - try adding in your favorite vegetables or serve on top of whole wheat noodles.

🥕 Meat-Free Recipes

Delicious, filling recipes perfect for vegetarians or anyone looking to stretch their grocery dollars.

  • Sweet Potato, Corn, & Black Bean Hash:

    • This recipe uses pantry staples like canned corn and canned black beans with fresh produce for a fiber rich, filling meal! The fiber from the beans, corn, and sweet potatoes can help you feel more satisfied after eating. 

  • Black Bean Tacos:
    • This recipe combines pantry staples like black beans and diced tomatoes with salsa and taco seasoning for a flavorful taco mixture. Try this recipe in whole wheat tortillas for added fiber. Fiber and protein can help you to feel fuller for longer and help slow digestion to prevent blood sugar spikes!  

🍌 Dessert Recipes

Simple sweet treats using in-season fruits and common pantry ingredients.

  • Peanut Butter and Banana Yogurt Pops:

    • This popsicle recipe combines bananas, yogurt, and peanut butter for a creamy, delicious way to cool down as the temperatures get warmer. Make these at the beginning of the week for a delicious sweet treat throughout the week!

  • Cookie in a Mug:
    • This cookie in a mug recipe combines ingredients like bananas, peanut butter, raisins, honey, milk, and oats for a quick and nutritious cookie!

 

Recipes from Our Nutrition Classes

Each month, our Nutrition Education team shares recipes in our classes that are easy, affordable, and made with ingredients you might already have in your pantry.

🍴Here’s what we’ve been cooking together this month:


  • Zesty Avocado Dip:

    • This avocado dip combines avocados, black beans, corn, cilantro, and jalapeno with lime juice for a tangy dip. You can serve this as a side to your favorite entree or as a snack throughout the week! The avocado provides healthy fats, which can help to prevent heart disease. 

  • Tuna Salad:
    • This tuna salad is a light and refreshing twist on a traditional tuna salad! This recipe combines greek yogurt, lemon juice, dill, and mustard with tuna, celery, and red onion for a tangy salad. Try serving on top of whole wheat bread or whole grain crackers for added fiber. 

  • Black Bean Mediterranean Salad:

    • This salad combines cucumbers, tomatoes, bell peppers, and black beans with a red wine vinaigrette for a mediterranean style salad. The black beans in the recipe provide fiber and protein to help you feel fuller for longer! Try serving this salad alongside your favorite entree. 

  • Sweet Potato Fries with Honey Mustard:
    • These sweet potato fries are a nutritious and delicious way to eat your sweet potatoes. Try cooking them in the oven or air fryer and pair them with the Greek yogurt honey mustard! The sweet potatoes provide our bodies with vitamin A, which helps to keep our eyes healthy.

  • Blueberry Banana Smoothies:

    • This creamy blueberry banana smoothie blends frozen fruit, Greek yogurt, and milk for a refreshing, naturally sweet drink that’s rich in fiber and protein.
