Each month, we feature simple, flavorful recipes that highlight what’s in season and what you might already have from your pantry or food box.

Whether you're cooking with meat, going meatless, or craving something sweet, there's something here for everyone.


🍗 Meat-Based Recipes

Hearty meals featuring lean proteins paired with seasonal produce and pantry staples.

  • Black Bean Tuna Salad:
    • This Black Bean Tuna Salad uses canned tuna, canned beans, pasta, and lemon juice for a fresh and flavorful tuna salad! This recipe makes about 5 servings, making it great for meal prepping at the beginning of each week and eating lunches or dinners throughout the week.

  • Microwave Chicken Enchiladas:
    • These microwave enchiladas combine pantry staples like canned chicken and canned black beans with your favorite enchilada sauce and tortillas for a quick and easy meal! The chicken and black beans provide protein, which can help to support muscle growth and healing.

🥕 Meat-Free Recipes

Delicious, filling recipes perfect for vegetarians or anyone looking to stretch their grocery dollars.

  • Yam and Black Bean Tacos:

    • This recipe uses canned goods like canned yams or sweet potatoes and canned black beans with seasonings to provide a filling, tasty taco! The sweet potatoes provide vitamin A, which can help to support eye health, and the black beans provide fiber, which can help to keep you feeling fuller for longer.

  • Microwave Shashuka:
    • This recipe combines canned chickpeas, marinara sauce, and an egg for a quick and easy meal! The chickpeas provide fiber and protein, which can help you feel full and slow digestion to prevent blood sugar spikes.  

🍌 Dessert Recipes

Simple sweet treats using in-season fruits and common pantry ingredients.

  • Ambrosia Salad:

    • This ambrosia salad recipe combines canned pineapple, mandarin oranges, and a banana with vanilla yogurt for a sweet treat! The mandarin oranges and pineapple provide us with vitamin C, which can help to support your immune system and prevent you from getting sick.

  • Frozen Yogurt Bark:
    • This frozen yogurt bark recipe combines fresh berries, yogurt, honey, and walnuts for a simple and nutritious dessert! This recipe can be prepared in advance and stored in an airtight container in the freezer, making it a good recipe to meal prep for dessert throughout the week.

Each month, our Nutrition Education team shares recipes in our classes that are easy, affordable, and made with ingredients you might already have in your pantry.

🍴Here’s what we’ve been cooking together this month:


  • Apple Pie Yogurt Parfaits:

    • This yogurt parfait combines cinnamon apples and granola with vanilla greek yogurt for a delicious, balanced snack. The apples and granola provide fiber, which can help support your digestive health.

  • Sweet Corn and Quinoa Salad:
    • This salad combines quinoa, sweet corn, and bell peppers for a light and refreshing salad! The bell pepper in this recipe provides vitamin C, which can help to support your immune system.

  • Apple Dijon Kale Salad:

    • This salad combined kale, apples, dried cranberries, and walnuts with a dijon vinaigrette for a tangy salad. The walnuts in this recipe provide us with unsaturated fats, or healthy fats. Unsaturated fats can help to support heart health by lowering LDL ("bad") cholesterol and raising HDL ("good") cholesterol!

  • Bean Dip:
    • This 3-ingredient bean dip recipe combines refried beans, taco sauce, and cheese for a protein and fiber filled recipe. Try it with baby carrots or corn tortilla chips for a quick and easy snack!
